Easy to make and very moist. It is soo tasty, it is absolutely addictive. The more you eat the more you want.
1 white cake mix- 2 layer size
1 4 oz. instant vanilla pudding mix
1/3 cup cooking oil
1 cup canned pure pumpkin (without spices)
1/2 cup water
4 eggs
2 tsp cinnamon
1 tsp pumpkin spice
1/4 cup molasses
Cream Cheese Icing
1- 4 oz cream cheese softened
2 cups icing sugar
1/4 cup butter softened
1 tsp vanilla
Put all ingredients in bowl.  Beat slowly to combine the beat on medium speed until light & fluffy. If you icing is too thin add a little more icing sugar.
Preheat oven to 350 F (180C). Combine all ingredients to moisten. Beat at medium speed until smooth,(about 2 minutes). Turn batter into greased 9 x 13 inch pan. Bake about 40 minutes or until toothpick comes out clean. Cool. Ice with cream cheese Icing and sprinkle with coconut.
