Pumpkin Cheese Bread from The Inn at Rutland in Rutland, Vermont, a listed inn.
2 1/2 cup sugar
8 ounces cream cheese
1/2 cup butter
4 large eggs room temperature
2 cups cooked or canned pumpkin
3 1/2 cups flour
1 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon baking powder
1/4 teaspoon ground cloves
Preheat oven to 350 degrees F.

Spray pan(s) with cooking spray.

In large bowl of electric mixer beat sugar, butter and cream cheese until fluffy.

Add eggs one at a time.

Beat in pumpkin.

In another large bowl combine flour, salt, cinnamon, baking powder and cloves with a wire whisk.

Gradually add to pumpkin mixture, stirring just until moistened.

Bake in 2 large loaf pans (9”x5”x1½”) for 70 minutes or 6-7 small pans for 40-50 minutes.

Let cool on rack for 10 minutes before removing from pans.

Cool completely before slicing.
