Pumpkin Pancakes

  Makes 12-16 pancakes
2 cups all purpose flour
4 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground allspice
3/4 cup sugar
1 1/2 cups solid pack pumpkin
3 eggs
1 cup vanilla soy milk
3/4 cup vegetable oil
1 teaspoon vanilla
Cooking spray or butter for greasing griddle
Sift the dry ingredients and set aside. Using a large bowl, combine pumpkin, eggs, soymilk, oil and vanilla with a wire whisk. Add dry ingredients and blend thoroughly.

Pour 1/4 cup full of batter onto hot, greased griddle or electric skillet at 300 degrees F. Cook until bubbles form and bottom is brown. Turn and brown the other side. Serve with warm maple syrup.

Options: Add 4 ounces of chopped pecans to batter before cooking. Some people like their pumpkin pancakes with whipped cream so keep a can handy.
