Quick and Easy Fruit Cobbler

A delicious and simple dessert to be loved by all! Use any fruit you would like!!
flour; 3 cups
butter flavored shortening;1 stick
salt; 1/4 tsp salt
water; about 3/4 cup
Fruit Filling:
Your Choice of Fruit
sugar; 1 cup
Minute Tapioca; 3 heaping tbsp
An additional tablespoon of sugar
Preheat oven to 350 degrees.

Crust: In a large bowl, beat the shortening, flour, and salt unitl combined (no big clumps of shortening.)

Add water and mix. The crust should be very moist but not too wet.

Coat your surface with a good amount of flour to the point where you can't see through it.

Knead the dough quickly into a circle; almost as if you were going to make a pizza.

Set the cirlce of dough on the flour. Pick it up and turn it over twice adding flour to the surface where the dough sat.

Then roll the dough into a square (depending on what dish you use) starting with the edges and working to the center. When rolled out the dough should be 3 to 4 inches bigger than your dish on each side when you set the dish on your rolled out dough.

Once the dough is the right size, bring one of the sides of dough to the one opposite it, folding the dough in half. Then pick up the folded piece carefully and set it halfway into your non-greased dish. Fold the dough back out so it covers the bottom of your dish.

Then press the dough into the bottom sides and corners of the dish making slack with the excess dough.

Fruit Filling: You can use any fruit you want. Feel free to even combine fruit. Sometimes I'll do raspbeery, blackberry and peach.

Mix enough of your fruit to fill your dish with the minute tapioca and sugar. The 1 cup of sugar is estimated. Really you can use as little or much sugar as you like.

Then take the fruit and pour it into your dish with the dough already in it.

Fold the excess dough over the top of the fruit, leaving a space in the middle where you can still see some fruit. Take a tbsp of sugar and sprinkle over the top of the cobbler.

Bake in your 350 degree oven for about 45 minutes or until the crust feels sort of stiff and if the juice of fruit starts to bubble you know it's done. We always add ice cream to this!!!!
