Quick Bean Enchilada's Ole'

This is a nice quick and fast recipe to make for any who has a busy life or who just wants to prepare something quickly. It is very tasty and fulling.
1 cup corn (frozen or canned)
1 red/yellow pepper, diced
1 habenera hot pepper, diced
1/2 white onion, diced
1 clove of garlic, diced
1 can of drained black or pinto beans
1 tsp. cumin
1 1/2 cups of salsa
4 corn enchilada's
Saute the onion, garlic and peppers until wilted in 2 tblsp. of olive oil in a large pan then add the cumin, beans, corn and salsa. Cook all ingredients for 5 to 8 minutes, turning and mixing well.

Cook the enchilada's in a separate pan to brown on both sides.

Add 1/4 to 1/2 cup of bean mixture onto the cooked enchilada and and roll. Place two rolled enchilada's onto a place with a wedge of lime or tblsp. of salsa. Serve with a tossed salad.
