Quick Portuguese Frittata

In Portugal, farmers start working at sun-up & take a break mid-morning. This is one of the dishes served & a great way to stretch things. In our house, this was simply a way for my mom to use litle bits of this and little bits of that, so be adve
6 extra large eggs
1 tsp of chopped parsley
1 garlic clove finely chopped
1 handful of mixed red, yellow and green peppers - chopped
1 Portuguese red sausage (chouriço)...or spanish, finely chopped
1 small bay leaf
2 tbsp of finely chopped onion
1 large pelled potato - quartered and then thinly sliced
1 handful of favorite sliced mushrooms (optional)
A pinch of salt, a pinch of paprika and fresh ground pepper to taste
1/2 cup of olive oil
All metal medium size frying pan (no plastic handles, must be able to go in oven)
Pre-heat oven at 350.

Saute garlic, onion, parsley and bay leaf in olive oil. When onions are translucent add rest of ingredients except eggs. Allow to cook for 5 minutes or so, verify taste and adjust. Remove bay leaf. Scramble eggs and fold into mix. Bake until all egg is cooked.

Cheese lovers can add cheese when adding eggs or sprinkle on top once eggs are cooked and allow to golden.

NOTE - Baking is not required but frittata needs to be turned over half way through cooking. 2 large spatulas work best - one on top and one on bottom and flip it. Can also be used as a meal with a salad and favorite bread on the side, serves 3-4.

Slice in wedges (like pizza slices) and serve immediately
