Quick sweet and savory chicken curry

This is a sweet and savory dish. Very healthy depending on the type of rice and chicken you choose. Also good with a bit of basil or cilantro-by choice. May also substitute chicken with extra firm tofu for vegetarians.
1 lb Diced, bite size, chunks of Chicken (Breast or thighs)
1 large Diced chunks of Bell Pepper (red or green)
1 can Pineapple chunks
1 medium Diced chunks of Onion ( white, yellow, or red)
3-4 tbsp Curry powder (amount varies on taste)
2-3 servings Rice (brown or white)-quick cook rice is easier!
1 pinch salt and pepper (to taste)
Dice chicken into bite size chunks. Add 3 tbsp of olive oil to large pan. Medium heat.

Saute onion for about 1-2 minutes.

Add Chicken and saute until lightly brown.

Add bell pepper and saute with the chicken and onion.

Add pineapple chunks with about 1/4 cup of the juice (more if you want it to be saucier/sweeter.

add curry powder and a large pinch of salt and pepper.

cook for another 3-5 minutes.

Serve with brown or white rice-great accompaniment but not necessary.
