Ranie's Chocolate Cake

Won blue ribbon each time it was entered in the County Fair. Fill flat bottom ice cream cones and bake for kids
RECIPE INGREDIENTS
2 large squares unsweentned chocolate, melted
1 cup sugar
1/2 cup butter
1 large egg
1 tsp vanilla extract
1 tsp salt
1/2 cup hot water
1 1/3 cups all purpose flour
1 tsp baking powder
1/2 cup whole milk
Mocha Icing
2 1/2 cups powdered sugar
1/2 cup unsalted butter, softened
2 tbls strong coffee[from 3 tsp inst coffee & 1/2 cup hot water]
1/2 tsp vanilla extract
1 tbl cocoa
DIRECTIONS
Butter and flour cake pan


melt 2 large squares baking chocolate (unsweetened) in microwave


cream together sugar, butter, egg, vanilla, and salt


add melted chocolate and mix


add hot water & mix


combine flour and baking soda mix and add gradually to mixer


add milk and beat until smooth


pour into 8x8 pan and bake 350deg for 30 min & check. OR bake in 12 Jumbo flat bottom ice cream Cones - fill 1/2-3/4 full and bake 35 min

cool and frost with Mocha Icing


Mocha Icing


make very strong coffee with 3 tablespoons instant coffee in 1/2 cup water


combine all ingredients including 2 tablespoons strong coffee and mix until smooth


enough to cover 1 8x8 cake


spread on cooled cake or 12 flat bottom ice cream cones.
