Red Snapper Flaming Chowder

This recipe has been a huge success on a cold rainy day
RECIPE INGREDIENTS
4 lbs fillet Red Snapper cut into large pieces
1/4 Cup olive oil
3 Cups fresh chopped Basil
1 Small white onion chopped
1 Red and Green Bell pepper chopped
2 Cup carrots chopped
2 Potatoes or Sweet potato cut into bite size pieces
3 Clove of Garlic
1/4 Cup of Fresh Ginger
1 Jalepeno Pepper remove seeds and stem chop
4 Whole Tomatoes Fresh or 1 Tin Canned Tomatoes
One small tin of tomato sauce
4 Cups of Water
Salt and pepper to taste
DIRECTIONS
In a large pan add oil and all vegetables (except basil) and saute over medium heat until soft add salt and pepper to taste. In food processor add vegetable until finely can be a bit chunky. Return to pot and add water and tomatoe sauce...bring to boil and let simmer until blended...add snapper and basil for approx 5 - 7 minutes and voila your done...!


Serve with fresh salad and baguette...!
