this turned out to be a hearty very flavorful chile.
1lb chuck (not the leanest)
1lb ground pork
2 med yellow onions diced roughly
1 green bell pepper diced roughly
1 red bell pepper diced roughly
2 tsp minced garlic
1/2 cup of chicken broth
1/2 cup red wine
1 can diced tomatoes
1 can black beans
1 can kidney beans
3 tble spoons chile powder
1 tble spoon of chile cayenne pepper
brown the pork and the chuck remove from the pan and put in large saucepan

saute the onion and the garlic add to the meat

saute the peppers add to the saucepan

deglaze the pan with wine and chicken stock, let reduce by 1/3 add to the saucepan, mix all ingrediants

add the tomatoes, black beans and kidney beans

add the chile powder and chile cayenne pepper

mix together

cook uncovered on med high for approx 1 hour

over that period the sauce will reduce and thicken

all flavors will meld together

you can add fresh tomatoes and more spice to taste.
