Mom"s Italian Ricotta cake
RECIPE INGREDIENTS
1 box yellow cake mix(prepare as on box)
Cheese Mixture below
4 eggs
3/4 cup sugar
1 tsp. vanilla
2-15oz. container Ricotta cheese
Frosting
1 large 20oz.crushed Pineapple(drained)
8oz. container cool whip
1 small 3-1/2oz.box pistachio instant pudding
DIRECTIONS
Mix Ricotta cheese, sugar,vanilla and eggs together until well blended. Set aside now prepare cake mix as directed on box. Pour cake into a greased & floured 9x13 cake pan. Gently pour cheese mixture over cake batter evenly over top.


Bake at 350 for 1 Hr. or until golden brown. Cool cake then frost


Put drained pineapple in a bowl. Mix dry pudding mix into pineapple, then fold cool whip into this mixture. Spread over cake then refrigerate.
