Roast Beef Hash

My mother made this when we had left-over roast beef ... we loved it then and we still do!!
1/2 lb. leftover cooked roast beef or steak, diced small
2 lg. russet potatoes, peeled and diced
1 med. onion, diced
1 green bell pepper, diced small
1 tsp. seasoned salt
1/2 tsp. black pepper or to taste
2 tbl. canola or other vegetable oil
In a large skillet, on medium heat, add the oil and heat until warm.

Add the onion and pepper and cook until they soften.

Add the meat and seasonings and stir until well mixed.

Cover and turn the heat down to low.

Saute, turning with a spatula occasionally, until the potatoes soften and get a bit crispy on the outside.

Serve with scrambled or poached eggs if desired.

This makes a terrific change from corn beef hash, and can be served either for breakfast, lunch or dinner.
