Rocky Road Dessert Pie

Easy way to turn Rocky Road candy into a dessert !
1 box chocolate cake mix
2/3 C, water
3Tb. oil
2 eggs
1 pint whipping cream (reserve 1Tb. for glaze
2/3C. miniature marshmallows
2/3C. coarsely chopped, toasted almonds
2/3C. coarsely chopped semi-sweet choc. chips (or mini-chips)
Chocolate Glaze: Heat 1Tb. cream, 1 tsp. butter, 1oz. semisweet chocolate. Blend until smooth.
Preheat oven to 350F.

Grease and dust with sugar a 9in. pie plate.

Reserve 1 & 2/3C. dry cake mix.

Beat remaining cake mix, water, oil, eggs in medium bowl for 2 mins.

Spread in pie pan. Bake until cake springs back when lightly touched about 30mins. Cool completely.

Beat whipping cream together with reserved dry cake mix until stiff.

Fold in marshmallows, almonds and chocolate chips.

Drizzle glaze over the top. Refrigerate at least 2 hours before serving. Best if eaten the same day. Refrigerate any leftovers.

* This can easily be doubled using 2 cake mixes and a 9x13in. cake pan.
