Rummed Bananas

RECIPE INGREDIENTS
2 cups granulated sugar
2 tablespoons butter
1/4 cup light rum
1/4 cup heavy cream
2 bananas, peeled, halved lengthwise and then crosswise
1 quart vanilla ice cream
DIRECTIONS
In a small, heavy saucepan over high heat, stir the sugar constantly with a wooden spoon until it melts and caramelizes to a rich brown color, about 8 minutes.


Add the butter and stir vigorously to combine it with the sugar. Add the rum and then the cream, stirring vigorously to incorporate.


Add the bananas and stir to coat with the sauce. Spoon portions over vanilla ice cream and serve at once.
