sausage and Bellpeppers over Rice

A good healthy and quick delicious meal
One large smoked sausage, and one large Kelbasa Sausage
Two large red and green bellpeppers (each)
One pound of raw devinve large shrimps with the tails and shells removed.
One Red onion chopped
One teaspoon of minced garlic
One teaspoon of Cajun spice (optional)
Olive Oil
One pot of cooked rice
Coat your skillet very lightly with olive oil, and place your garlic on low heat. Slice both sausages into 1 inch pieces. Slice your bellpeppers into 1/2 inch stripes (Bite size). Place your chopped onion into into the skillet and combine all of the other prepared ingrediates into the skillet and let simmer at low tempeture stirring the ingrediates as they cook. (every 10 minutes for a 1/2 hours).

In a separate pan steam 1/2 cup of rice until done.

Place the cooked ingreddiates over the steamed rice for a delicious meal.

Where have I seen this one!
This is a good recipe but I've cooked this so many times myself. This is not exclusive. I learned this from my ex-mother-in-law who is cajun. This recipe can take many forms - you can change rice for noodles, sausage for hamburger, shrimp for scallops, bell peppers for green beans, etc. etc.
