Sausage and Rice Casserole

1 lb. spicy ground sausage
1 1/2 C. brown rice (dry)
1/2 medium onion, fine dice
2 celery stalks, fine dice
1 bunch broccoli florets
1/2 TB fresh thyme
1 can cream of chicken soup
black pepper
3 slices whole wheat bread in crumbs
NOTE: does not need salt, as the sausage and cream of chicken soup will be salty.
Cook 1 1/2 c. rice according to pkg. directions, set aside when done.

Cook sausage with celery and onion until no longer pink.

Mix together rice, sausage with remaining ingredients in casserole pan that has been sprayed with cooking spray. Top with bread crumbs, bake in 350 oven for 30-35 minutes until bubbly and bread crumbs are dark brown
