Italian comfort food that is fast, affordable and delicious! We had this at least once a month when I was growing up. It's the perfect dish for busy families and is a great leftovers meal too.
1-2 Whole Mild Pepper, seeded and chopped into large pieces. You can use Italian sweet peppers, bell peppers or any other mild pepper.
1 pound mild or spicy Italian sausage, sliced or crumbled
5 medium potatoes, sliced 1/4 inch or more thick (your choice of type)
Salt & Pepper
Hot Sauce (optional)
Extra Virgin Olive Oil
Heat 2 Tablespoons of extra virgin olive oil in a large pan over medium heat.

Add potato slices and cook until nearly done and have some golden color.

Add the sausage and stir while it browns.

Add the peppers and salt and pepper to taste.

Top off with a bit more olive oil if the mixture sticks to the pan.

Turn down the heat to simmer for 10-15 minutes and cover. Stir the mixture about every 5 minutes to be sure everything cooks evenly.

Serve warm with crusty garlic bread and a green salad.

Hot sauce can be used if you want to add more spice.
