This wonderful sausage potato pie is great for brunch, lunch or dinner. I serve it with green salad, fruit and beverage. Very popular with all age groups.
(3) cups of shredded potatoes
(3) tbls of vegetable oil
(1) package of Jimmy Dean Sausage
(1) cup of Monteray Jack cheese, shredded
(3) eggs
(10) oz of canned milk
(1) cup of green onions diced
salt and pepper to taste
Heat oven to 350.

Beat 3 eggs with canned milk, salt & pepper. Set aside.

Cut onions. Set aside.

Shred cheese. Set aside.

Shred potatoes, stir in oil and quickly turn into a large glass pie plate, forming potato crust. Do not let it stand out in the air too long or the potatoes turn grey.

Bake in oven for 15 minutes.

Brown and crumble sausge.

Layer into the potato crust in this order:




Pour egg/milk mixture over the top.

Bake for 40 minutes or until brown on top.

Let stand for 5 minutes.

Cut and serve with green salad and side of fruit.

This is great as a brunch, lunch or dinner. Very good reheated in the Microwave for tomorrow's lunch. Very popular with all age groups.

while this sounds tasty, please remove this from the passover recipes. i don't think pork and cheese are on the menu
