Scallop and Bacon Saute

I came up with this Italian inspired dish that marries two of my favorite things - scallops and bacon!!
RECIPE INGREDIENTS
4-6 slices bacon, diced
1 tsp minced shallots
1 tsp minced garlic
1/2 tsp crushed hot red peppers
1 pound sea scallops
1 bottle (8oz.) clam juice
1/4 c dry vermouth
1 pound cooked linguine
1/4 cup chopped parsely
2 Tbsp extra-virgin Olive oil

DIRECTIONS
Cook the bacon in large skillet over medium-high heat until crisp. Transfer bacon to large serving bowl.


Discard all but 1T drippings from skillet. Add minced shallots, minced garlic, crushed red peppers and sea scallops; cook until browned, 4 minutes.


Transfer scallops to bowl. Add 1 bottle clam juice and dry vermouth to skillet. Bring to boil, reduce heat and simmer 2 minutes or until reduced by half. Toss with cooked linguine, bacon and scallops, chopped parsley and 2T extra-virgin olive oil.
