The trick with this recipe be sure to use whole milk, it is the creamiest scalloped taters. You can add chopped onions to the layers if you like them. THis is comfort food at its best, a Sunday dinner due to the time! but oh my!!!
3 lbs white potatoes, peeled sliced 1/8 inch thick
1/2 cup butter
1/2 cup flour
3 cups whole milk
3/4 teaspoon salt
1/2 teaspoon pepper
1 lb ham sliced 1/4 inch thick cut in 1/4 inch cubes
Preheat oven to 350 degrees.

In 2 qt saucepan, melt butter till bubbly, add flour whisking constantly till combined add salt and pepper, cook; whisking constantly for 3 minutes. Slowly add milk whisking constantly. Whisking constantly; Cook over medium/high heat till thickened(coats a spoon when lifted).

In a 3 qt casserole dish, coat bottom of casserole with sauce. Layer 1/3 potatoes, 1/3 ham, 1/3 sauce, 1/3 taters, ham, sauce, ending with potatoes and cover with sauce. (if sauce thickens before you end, whisk in a splash of milk to make it pourable) Cover; bake in oven for 1 hour, remove cover continue baking till potatoes tender, test by inserting table knife in center of casserole. Let stand 15 minutes after removing from oven.
