This is an easy way to use leftover corn-on-the-cob from a summer dinner the night before.
RECIPE INGREDIENTS
2 eggs
1-2 T milk
1/4 cup corn (use leftover corn, cut from the cob)
optional ingredients:
fresh herbs (tarragon, dill, or thyme)
shredded cheese (sharp cheddar or gorganzola work well)
DIRECTIONS
Combine eggs, milk, and corn.

Mix well.

Spray a small skillet with Pam or such.

Pour egg mixture into pan.

Add optional ingredients, if using.

Cook as you would any scrambled eggs until desired consistency (wet or dry scramble).
