Seafood Boquet

I have been preparing this meal for years and I change it up depending on what I can get on sale seafood wise or turkey or chicken, it has never came out anything but fabulous. Very tasty!!
RECIPE INGREDIENTS
2 Tbs. olive oil
1 lrg. chicken breast,diced in 1/4 inch cubes
1/2 lb. chorizo sausage, sliced in 1/4 inch pieces
1 onion, chopped
2 cups long grain rice
4 1/2 cups chicken stock or vegetable stock
2 bay leaves
2 tsp. cumin
1/2 tsp. saffron
2 tsp. basil
sprinkle of salt and pepper
3/4 cup frozen lima beans
1/2 cup chicken or vegetable stock
20 muscles in shells
20 lrg. shrimp, peeled and deviened
DIRECTIONS
In a heavy pot warm olive oil. Add your meats ,and cook until chiken and sausage are cooked through.


Remove meat to a side dish.


Add onion and rice to pan and saute until translucent


Add stock,replace meat into the pan and add all ingredients through salt and pepper.


Bring to a boil, reduce to simmer and cover.


Cook until rice has almost absorbed all of the stock, about 12 to 15 minutes.


Add lima beans and shrimp, cover and cook another 10 min.


In a seperate pan place 1/2 cup of stock and musscles over high heat and shake pan constantly until shells have opened, not long, 5 to 7 min.


Add muscles and stock to the rice mixture,and cover until ready to serve.
