This is low carb and low calorie, healthy and elegant, and tasty! Not too difficult if ingredients are cut up and pre-measured ahead of time. Recipe from 501 Recipes for a Low-Carb Life.
RECIPE INGREDIENTS
3/4 cup corn kernels
1/2 cup shredded carrot
1/4 cup frozen green peas, thawed
14 cup sliced scallions
8 oz lean white fish,such as cod, cut into 1-inch pieces
12 large shrimp (3/4 lb), peeled and deveined
4 large sea scallops (1/2 lb.)
1/4 tsp. salt
2 Tablespoons freshly grated Parmesan cheese
2 Tablespoons fresh lemon juice
DIRECTIONS
Cut up and measure everything ahead of time to save time. Can prepare ingredients the night before or in the morning.


1. Preheat the oven to 425 degrees. Combine the corn, carrot, peas, and scallions in a bowl and mix well.


2. Cut 4 (15-inch) squares of parchment paper. Fold each square in half, open each and place 1/4 cup of the corn mixture near the fold. Arrange 1/4 of the cod, 3 shrimp, and 1 scallop in a single layer over the corn mixture and sprinkle salt over the seafood. Spoon an additional 1/4 cup corn mixture over each serving, top each with 1 1/2 teaspoons cheese and drizzle with the lemon juice.


3. Fold the paper and seal the edges with narrow folds. Place the packets on a baking sheet.


4. Bake the packets until puffed and lightly browned, about 11 minutes. Place the packets on individual serving plates, cut open and serve immediately.
