Serrano Chile Chicken

This recipe has won many contests!! Easy to prepare with fresh ingredients. Serrano Chiles give this dish a little kick while the grapes tone it down and add delicious flavor and texture. You will make this one over and over!
4 Chicken Breasts (fillet)
Flour mixed with Salt, Pepper and Garlic Powder
1/4 c. Butter
4 Garlic cloves (diced)
2 shallots (sliced)
4 Serrano Chiles, sliced (or more for spicier)
1 bunch of purple grapes (seedless) sliced in 1/2
2 cups Chicken Broth
1/4 cup Roses Lime Juice (for margaritas)
Lime slices
Fillet and ound chicken breast and coat each piece in flour mixture.

Fry in pan with hot canola oil. Turn only once until crispy brown, set aside on plate with foil tent.

Melt butter in pan with oil and bits from frying.

Add garlic and shallots and saute.

Stir in lime juice, chicken broth and stir until smooth. When sauce is slightly thickened, add Serrano Chiles and grapes.

Arrange chicken on a platter, pour sauce over top and garnish with lime wedges.

Great served on a bed of linguine noodles or mashed potatoes.
