Makes 2 cups (Serves 4)
- 2 cups shelled walnuts
- 2 cups sugar
- 2 cups vegetable oil
- 2 tablespoons sesame seeds
In a wok or large saute pan over high heat, bring 3 cups of water to the boil. Add the walnuts and cook for 1 minute. Drain the nuts from the water and pour the water out of the wok.
Return the wok to the heat and, over high heat, bring 1/2 cup of water to the boil. Add the nuts. Add 1 cup of the sugar. Cook and stir until almost all of the water has evaporated. Remove the nuts from the wok and drain them away from any remaining water.
Over high heat, warm the empty wok. Return the nuts to the wok. Add the remaining cup of sugar and 1 tablespoon of water. Stir-fry for 2 minutes. Remove the nuts from the wok.
In the wok over medium heat, heat the vegetable oil. Add the nuts and deep-fry for 2 minutes. Drain the nuts from the oil and place them into a mixing bowl. Blend in the sesame seeds.
