Shoepeg & Sweet Baby Peas

This is the best quick and easy Picnic or Pot Luck dish! So yummy cold or even at room temperature. This can be easily doubled for a large group!
1 can of Shoepeg corn, drained
1 can of Sweet Baby peas(young/early), drained
1/2 c sweet red or green pepper (or both), diced small
1/2 c celery, diced
1/2 c sweet onion (I like red), diced
1/2 c balsalmic vinegar
1/4 c sugar (can add a more but not too much)
1/2 good extra virgin olive oil
Drain corn and peas then add to a large bowl. Add remaining veggies. Toss gently but thoroughly and refrigerate.

Meanwhile dissolve the sugar in the vinegar. Gradually whisk in the EVOO. Just before serving toss with the dressing. Can be served cold or at room temperature.

Yummy good for any picnic or outing!
