Simpli-Fied Mobile Breakfast Tacos

I make these ahead of time and freeze them for mornings when we need a quick, delicious breakfast.
RECIPE INGREDIENTS
2 cups Simply Potatoes Shredded Hash Browns
1 to 1 1/2 lb. Sausage (I use Jimmy Dean)
1/4 to 1/2 cup onion, chopped (I use red onion)
10 eggs, lightly beaten
1/2 cup Picante Sauce (I use mild)
1 cup Shredded Cheese (I use Mexican Blend)
12 medium size Flour Tortillas
DIRECTIONS
In large skillet or Dutch oven, crumble and cook sausage until done.


Add onion and potatoes and cook 5 minutes.


Add eggs. Cook til eggs are done.


Add Picante sauce and cheese. Lightly stir. Remove from heat.


Heat tortillas in microwave until soft.


Spoon egg mixture into tortilla and roll up.


Serve warm.


You can gently brown these in a skillet for some extra crunch, but it's not necessary.


These freeze well. Wrap each separately in foil and pop several into a Ziploc. Freeze. When ready to use, remove foil, place on plate in microwave and heat 60-90 seconds.
