Simply Delicious Leek and Potato Cake

With just four ingredients(excluding salt and pepper) and very little effort on your part , make a dish that will delight their taste buds and have friends and family coming back for more! Let them be amazed! You deserve a Simply Potatoes helping hand!
1 package Simply Potatoes Shredded Hash Brown Potatoes
8 Tbsp Butter, divided
1 lb Leeks, white part plus 1" of green, washed, julienne, and dried
½ cup Heavy Cream
Salt & Pepper
In medium saucepan, melt 2 tablespoons butter. Add leeks and cook 2 minutes, stirring. Add 2 more tablespoons butter, cover and cook without browning over medium heat.

Stir in cream and boil down to thicken. Season to taste with salt and pepper and cool.

Heat remaining butter in nonstick skillet. Spread 1/2 of potatoes to cover bottom. Top with braised leeks, leaving a 1 inch border of potatoes. Top with remaining potatoes and pat to form a cake. Cover and cook 5 minutes over medium heat. Lift cover to let steam escape and wipe inside of lid dry. Cook 5 more minutes and shake skillet to prevent sticking. Remove lid and wipe inside of lid dry again. Tilt skillet and spoon off excess butter, reserving it. Cover skillet and invert so potatoes rest on the lid. Return butter to skillet. Slide potato cake back into skillet, browned side up. Cook over med-low heat for 10-12 minutes until potatoes are browned. Slide onto serving dish.
