Prepared pesto whisked with a little vinegar makes the perfect dressing for sliced ripe tomatoes.


  • 1/4 cup prepared pesto
  • 1/4 cup white wine vinegar
  • 4 large tomatoes, sliced
  • 1/4 teaspoon salt
  • Freshly ground pepper to taste


Combine the pesto and vinegar in a small bowl. Drizzle over the tomatoes. Season with salt and pepper.
