Smoked Gouda Potato Gratin
- 2 pounds organic Yukon Gold or red potatoes, peeled
- 2 cups Wild Oats Organic Whole Milk
- 1 cup organic heavy cream
- 2 cloves garlic, peeled and smashed
- 1 teaspoon sea salt
- 1 teaspoon thyme
- 1/2 teaspoon freshly cracked black pepper
- 1 cup smoked Gouda, shredded
Preheat oven to 400 degrees F. Cut potatoes with a knife, mandoline or food processor into 1/8-inch slices.
Place potatoes, milk, cream, garlic, salt, thyme and pepper in saucepan. Heat to just boiling, stirring occasionally.
Pour half the mixture into a 3-quart baking dish. Sprinkle with half the cheese. Add the rest of the potatoes and sprinkle with the rest of the cheese.
Bake for about 40 minutes, until the potatoes are tender. Allow to rest for 15 minutes before serving.
