Smoked Jalapeno Chicken Drumsticks

Here's a unique chicken drumstick recipe that will have your family screaming for more. Good served hot for a meal or later cold in lunches, as an after-school snack or whenever.
1 Family-pack chicken drumsticks
1 cup salt
1 cup sugar
8 oz jar of sliced jalapenos
1 gallon water
Seasoning of your choice
Make a brine by mixing the water, salt & sugar in a suitable

sized container that will hold the drumsticks and the brine.

Mix the sugar and salt until fully dissolved. Pour the

sliced jalapenos in a small container and mash with a fork

or spoon.

Add the smashed jalapenos to the brine mix

and add the drumsticks. Stir the drumsticks around and make

sure they are all covered in the brine. Place in refrigerator

for 6-8 hours stirring occasionally.

Remove the drumsticks

from the brine. Dispose of the brine. Pat the drumsticks

with a paper towel to remove some of the remaining wet

brine. Apply a liberal amount of your favorite seasoning

or rub to the drumsticks.

Preheat your smoker to 250

degrees F., and place the drumsticks directly on the smoking

rack. Smoke at 250 degrees F. for 2.5 hours. (internal temp

should be 175-180 degrees F.) Remove the drumsticks from

the smoker and let rest for 15 minutes before serving.
