This may very well be the best thing ever
RECIPE INGREDIENTS
1 - 1 lb roll sausage e.g. [jimmy dean]
4 little smokey sausages split in half longways
cubed cheeses of choice or block cheese sliced 1/8 in thick [cheddar / pepper jack ] my favorites
2- green onion cut length of sausage roll
2-4 thin  green pepper slices
meat  rub of choice homemade or store bought
5 slices bacon
2-tablespoons brown sugar
hickory wood split
optional - tube large biscuits
DIRECTIONS
remove sausage from plastic wrap and split 3/4 way down length of roll


shake on the rub inside and outside


stuff sausage with the above dust on some more rub


close up the roll by working the meat up from side and pressing down on the stuffing as you go


wrap the roll with bacon and shake on more rub. rub brown sugar over the top


smoke for 3-4 hours


235 deg.


optional: after smoking is complete lay out enough biscuit so you can cover entire fatty and roll flat wrap around the smoke fatty and bake until the dough is nicely browned
