Smoky Roasted Cherry Jam

  • Active Time 15m
  • Total Time 1h

1 1/2 cups

This is not a sweet jam to eat on your peanut butter sandwich, rather a smoky, roasted cherry jam that goes well with savory foods like cheese, grilled pork tenderloin or roasted chicken. Try it on a grilled cheese sandwich with extra-sharp cheddar or fontina cheese.

Make Ahead Tip: Cover and refrigerate for up to 1 week.

ingredients

  • 4 cups halved pitted fresh cherries or thawed and drained frounceen whole cherries
  • 1/2 cup orange juice
  • 1 tablespoon chopped fresh thyme or 1/2 teaspoon dried
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon salt

directions

Preheat the oven to 450 degrees F.

Combine the cherries, orange juice, thyme, paprika and salt in a 9 by 13-inch baking pan. Roast, stirring 3 or 4 times, until the cherries are starting to break down and the liquid has thickened, 35 to 45 minutes.
