Smothered potatoes

These are a wonderful side dish with any entree and especially good served with egg for breakfast.
RECIPE INGREDIENTS
4 medium potatoes, peeled and thinly sliced
1 onion, peeled and thinly sliced
2 T vegetable oil
1 T butter
Ground red pepper
Salt
DIRECTIONS
Heat oil in a heavy saute pan and layer one third of the potatoes first. Season liberally with red pepper and a little salt. Layer half of the onion. Repeat with potatoes, seasoning, the remaining onions and top with potatoes. Cube the butter and drop on the top. Cover and cook over medium high heat until the bottom is browned. Turn and stir occasionally until the potatoes are cooked and browned.
