Snow Peas and Carrots with Mint

Makes 4 servings
- 2 tablespoons vegetable oil or unsalted butter or margarine, softened
- 1 tablespoon orange juice
- 2 tablespoons finely chopped fresh mint
- 1/2 teaspoon salt
- 3 cups water
- 2 medium carrots, thinly sliced at an angle
- 1/2 pound snow peas, trimmed
In a bowl, combine the oil or softened butter, orange juice, mint and salt, then set the mixture aside.
In a saucepan, bring the water, lightly salted, to a boil. Add the carrots and cook for 1-2 minutes. Then add the snow peas. Return the water to a boil and cook for 1 minute more. Drain the vegetables.
Place the cooked vegetables in the bowl with the mint mixture. Toss to coat evenly, and serve.
