Sour Cream and Soy Coffee Cake

Blend together until crumbly, and then set aside for later use:

|
½ cup Roasted soy nuts (Chopped)
|
|
Sift together and blend in:
|
|
Blend in, scrape down bowl and slightly more:
|
|
1. cup Sour cream or Soy Cream
|
|
1. Spread 1/3 of the batter evenly in a 9 x 9 in. greased pan.
|
|
2. Sprinkle ½ of the crumb topping evenly over the batter.
|
|
3. Gently spoon the remaining 2/3 of the batter over the crumb layer.
|
|
4. Top with the remaining crumb topping
|
|
Bake in a 350° oven for 35-40 minutes.
