SOUR CREAM APRICOT COOKIES

A Crispy tasty cookie...great for snacking or dipping in coffee or hot chocolate..or alongside ice cream sundaes...
RECIPE INGREDIENTS
½ Cup plus 3 Tablespoons  butter
7 Ounces  sugar
½ teaspoon baking soda
¼ teaspoon   salt
1 Large egg
¾ Cup DAISY Dairy Sour Cream
3/8 Cup Apricot Preserves
2 Cups All-purpose   flour
DIRECTIONS
In a large mixing bowl beat the butter until softened. Add the sugar, baking soda, and salt. Beat again until well combined.


Beat in eggs, sour cream, and apricot preserves. Add flour and mix well.


Heat oven to 350° F.


Drop dough with a teaspoon 2-inches apart on ungreased cookie sheets.


Bake for 8-10 minutes or until edges are lightly browned. Cool on a wire rack.


Just before serving brush with melted apricot preserves.


Cookies can be stored up to 3 days. Store in layers separated by waxed paper in an airtight container in the refrigerator.


Note: Any kind of fruit jam can be substituted for the apricot. Recipe can be increased proportionately
