Sour Cream Chocolate Chip Pancakes

1 egg
1 c flour
1 T Brown sugar
2 T Butter
1 t vanilla
1 T baking powder
2-3 T Sour Cream (or Yogurt)
1/2-3/4 c milk
pinch of salt
Semi sweet chocolate chips
butter still in stick/package for cooking
Whisk egg until it is light and airy.

Whisk in all other ingredients starting with only a half cup of the milk.

Keep adding milk in small splashes until you have your desired consistency. Thin enough that it runs off your whisk, thick enough that it coats it very well.

I like to do a test pancake and adjust.

Let your pan warm on a very low heat. Have a stick of butter around to wipe on the pan. It's easy with butter to not put too much in and to check how hot the pan is. If it is browning, it's too hot. Oils burn at much higher temperatures.

For the chocolate chips you can throw them in while it's cooking on the first side. You can place them in and push them into the pancake with your spatula before they get melty, or you can forcefully throw them in (this takes practice :) )

Flip when there are bubbles coming through or you can easily slip your spatula under the pancake. They should be contrasted light and golden in appearance.
