This is a very fast, simple, and delicious recipe that my mother used to make for the family for breakfast or brunch. Enjoy!!
1 1/2 c. sour cream
5-6 eggs
2-3 tbl. butter or cooking oil
salt & pepper to taste
Heat butter or oil in skillet

Stir in sour cream

When sour cream bubbles, carefully add eggs into the sour cream (do not stir)

Simmer covered until egg whites are cooked to your liking

Salt and Pepper to taste

Sour cream poached eggs
If you are a sour cream fan, this is a quick and easy way to poach an egg. I cut this recipe by 1/3 and cooked 3 eggs in a Teflon omelet pan with the butter. Eggs cooked well and I cooked the yokes until they were almost soft boiled. (the way I like them) If you are in a egg rut and looking for something a little different that is very easy this is the recipe I would recommend.
