A variation on my other sourdough pancake recipe that uses an overnight sponge. this also makes the lightest waffles ever. See the previous recipe for starter recipe
RECIPE INGREDIENTS
Over night sponge
1 Cup sourdough starter
2 C buttermilk
2 C four
1/4C Sugar
Batter
2 eggs beaten
1/4 C vegetable oil
1 t baking powder
1 t baking soda
1.5 t salt
DIRECTIONS
mix ingredients for sponge together and cover overnight in a warm place.


beat eggs slightly in a bowl


add salt, baking powder and soda and mix thoroughly with eggs.


add oil and mix together


Add to overnight sponge and let sit for 10 minutes


Cook on a hot griddle with a little oil


Cook until bubbles stop forming and turn
