Sourdough Pancakes

  20 3" pancakes
1/2 cup active starter (refresh night before)
2 cups soft flour
2 t baking powder
1/2 t baking soda
1 t salt
2 T sugar
2 eggs
2 c buttermilk
1/4 cup oil or melted butter
mix dry ingredients thoroughly in a bowl

In a plastic or glass bowl mix starter, eggs, and buttermilk until the starter is completely broken up. Add the oil. Add dry ingredients and stir until just mixed. Add additional buttermilk if needed to thin.

Let sit for 10 minutes.

Cook on a hot griddle flipping once.

A couple of shortcuts, I use White Lily self rising flour and omit the baking powder and salt. This is a great recipe to use if you bake sourdough bread regularly.

Sourdough starter (if you dont have a recipe)

1/2 cup spring water

a few grains of instant yeast

3/4 cup flour

Mix and let sit overnight

Refresh daily for 3 days

discard 1/3 of starter

1/2 c spring water

3/4 c flour

ready to use on the fourth day

can store up to a week in refrigerator.

Refresh before using by adding 1/2 c water and 3/4 c flour 8 hours before using

Awesome Recipe!
I'm fairly new to the sourdough realm of cooking and baking and have tried a couple of different SD pancake recipes. This one has the best taste, texture and yield of all I've tried so far!
