South-Western Corn Bread Delight

While you are watching the Thanksgiving games, bake this delightful cornbread and put your feet up while its crust turns to gold! It's great as a side dish to a formal meal, or you can eat it out of a bowl with a spoon or carefully with fingers!
1 cup yellow cornmeal
1 cup flour, your choice
No sugar!
1 cup crushed French-fried onions
1 tablespoon baking powder
1 teaspoon chili powder
1 teaspoon salt
3 eggs
One 6-ounce carton plain yogurt with 1/4 cup milk added
3/4 cup corn oil
1 small can corn niblets with diced peppers in the mix
Combine the dry ingredients in a large mixing bowl.

Beat together the eggs, yogurt, milk and corn oil in another bowl, then add to the first bowl and mix well.

Fold in the corn niblets with peppers and pour batter into an 8-inch square glass baking dish.

Bake at 350 degrees F for 30 minutes, then test for doneness.

If not done yet, bake five to ten minutes longer.

Cut into squares and serve warm.
