Colcannon with a bump!!
1 cup mashed cooked rutabaga
1 cup mashed cooked turnip
1 cup mashed cooked potato
2 cups shredded cooked cabbage
3 green onions, thinly sliced
1/2 cup cream
2 Tbs butter
salt & pepper to taste
3 sweet onions, finely sliced
2 Tbs butter
2Tbs olive oil
Cook cabbage until tender. Drain. Cook rutabaga, potato and turnip until tender, drain and fork mash. Heat cream, 2 Tbs butter and green onions until it just reachs a simmer. Mix cooked, mashed root veggies with cream, butter onion mixture. Spread into 11" X 7 inch pan that has been coated with cooking spray.

Meanwhile carmelize sweet onions in butter and olive oil. When mahogany colored and very limp spread over top of veggie mix. Dot with butter and bake uncovered for 30 minutes at 325º.
