Active Time:  25 Minutes
Total Time:  45 Minutes
  6 servings
1.5 pounds very lean ground beef
1 c. chopped onion
3-5 cloves garlic,sliced,diced or crushed
2 cans(14.5oz.) beans in chili"gravy"(Bush's)
1.5c. corn(canned /frozen)
1 small can chopped green chilis & 1/2 salsa
1 recipe Mama's own cornbread:
3T. melted butter
1.25c. milk
4tsp. Baking powder(Al. free)
1/2 tsp. salt
2T. sugar
1c. all purpose flour
1/2 to 3/4 c. cheddar shreds
Brown the meat in large(at least 12 inch/chicken fryer) cast iron skillet ,drain if necessary;add onion and garlic and saute a few minutes. Add remaining ingredients down to the cornbread . Leave simmering as you make the cornbread.

Cornbread: Whisk first three ingredients then stir in dry ingredients that have been mixed together in small bowl. Add most of the cheese to cornbread mixture. Pour mixture in a circular fashion atop the meat mix in the skillet. Top with a little cheddar shreds, if you like. Bake at 400 degrees until cornbread has browned to golden. Serve with a dollop of sour cream . Lots of green salads go well with this.
