Spiced Mashed Sweet Potatoes
Serves: 6 to 8
Aromatic spices like cinnamon, clove and nutmeg warm this sweet dish.
- 2 pounds organic sweet potatoes, peeled
- 1 teaspoon salt
- 1/4 cup Wild Oats Organic Syrup
- 3 tablespoons Wild Oats Organic Unsalted Butter
- 2 teaspoons freshly grated ginger
- 2 teaspoons ground cinnamon
- 1 teaspoon ground nutmeg
- 1/2 teaspoon ground cloves
- 1/2 teaspoon ground cardamom
- 1/2 cup Wild Oats Organic Milk
Cut potatoes into 1-inch chunks. Place potatoes and salt in a large saucepan and cover with cold water. Cover and bring to a boil. Turn heat down to a simmer, and cook for 20 minutes, or until the potatoes are tender.
Drain potatoes. Run potatoes through a food mill, ricer or mash with a potato masher.
Return mashed potatoes to saucepan. Turn heat to low, stir in syrup, butter, ginger, cinnamon, nutmeg, cloves, cardamom and milk. Serve warm.
