Easy, yummy chicken chili on a cold nite.
1 lb.boneless skinless chicken thighs, chopped
1 medium onion, chopped
2 cloves garlic, chopped
1 medium yellow or green bell pepper, chopped
Saute all above in olive oil, add:
2 cans RoTel Original diced tomatoes with green chilis
2 cans pinto beans with jalapeno peppers
1 can cannelloni beans
1 jar (10oz) green enchilada sauce
1 Tbls seasoned rice vinegar
1 Tbls white wine
1 tsp instant chicken bouillon
Spicy Chicken Chili Recipe at
Spray a 5 quart slowcooker with Pam (or use crockpot liner)

Mix all together in crockpot and cook on med. heat for

8 to 9 hours.

Serve with shredded cheese, chopped cilantro, sour cream

and flour tortillas.

Way too much heat!!!
I followed this recipe to a T, except for using white meat chicken in lieu of dark meat. I love hot food, but the heat in this recipe was overpowering. Curiously, the seasoning was lacking. I added some cumin and a bay leaf, but the overall heat blew out all other flavors. I don't know how fix this recipe.
