St. Pat’s Muffin Tin Potato Ruebens

Potatoes and Corned beef is traditional here in USA. And although my family loves it – Ruebens are a real deal! Melty cheese and dressing on the deli corned beef…hmmm. And if we baked it in a potato cup and filled it – oh yeah! These are the best!
RECIPE INGREDIENTS
• 3 cups Simply Potatoes® Shredded Hash Browns
• 1/4 cup butter or margarine, melted
• 1/4 teaspoon salt
• 1/2 pound deli thick sliced corned beef, chopped
• 1/2 cup swiss cheese, shredded
• 1/3 cup Russian Dressing
DIRECTIONS
1.Heat oven to 400°F. Grease 12-cup regular muffin cup pan; set aside.


2.In medium bowl combine Simply Potatoes, butter and salt; mix well. Press about ¼ cup Simply Potatoes mixture into each muffin cup lining bottom and sides. Bake 12 to 15 minutes or until edges are golden brown.


3. Meanwhile, mix the chopped corned beef and cheese in a medium sized bowl. Fold in the Russian dressing. Fill each baked hash brown cup equally with Rueben mixture.


4.Bake 5 minutes to heat and melt cheese.
