- 3 1/4 cups flour
- 1 3/4 cups sugar
- 1/2 teaspoon cinnamon
- 1 teaspoon salt
- 1 teaspoon baking soda
- 3 eggs, lightly beaten
- 1 cup plus 2 tablespoons oil
- Two 10-ounce packages sliced frounceen strawberries and their juice
- 1 1/4 cups chopped walnuts (optional)
Mix the flour, sugar, cinnamon, salt and baking soda in a large bowl. Add the eggs, oil and strawberries, and blend well (do not use a mixer). Pour into 2 greased and floured loaf pans. Bake at 350 degrees F for 50-60 minutes.
