Stuffed Bell Peppers

- For the Stuffing:
- 1/2 cup butter
- 2 small red onions, chopped
- 2 garlic cloves
- 11 ounces spicy sausage meat or skinned, spicy sausages
- 4 ounes cooked bulgur
- 1 tablespoon chopped parsley
- 10 cherry tomatoes, quartered
- Salt and Pepper
- For the Bell Peppers:
- 4 medium-size red bell peppers
- Olive oil
FOR THE STUFFING:
Melt butter in a frying-pan and add onions and garlic. Fry gently until onions begin to brown. Add sausage meat and fry gently for 5 minutes. In a bowl, mix together bulgur, parsley and tomatoes. Add sausage meat mixture; season with salt and pepper.
FOR THE BELL PEPPERS:
Preheat oven to 375 degrees F. Halve bell peppers and discard seeds. Fill the peppers with stuffing and place in a shallow baking dish. Drizzle with a little olive oil and bake for
