Stuffed Bell Peppers

Serves 4


  • For the Stuffing:
  • 1/2 cup butter
  • 2 small red onions, chopped
  • 2 garlic cloves
  • 11 ounces spicy sausage meat or skinned, spicy sausages
  • 4 ounes cooked bulgur
  • 1 tablespoon chopped parsley
  • 10 cherry tomatoes, quartered
  • Salt and Pepper
  • For the Bell Peppers:
  • 4 medium-size red bell peppers
  • Olive oil



Melt butter in a frying-pan and add onions and garlic. Fry gently until onions begin to brown. Add sausage meat and fry gently for 5 minutes. In a bowl, mix together bulgur, parsley and tomatoes. Add sausage meat mixture; season with salt and pepper.


Preheat oven to 375 degrees F. Halve bell peppers and discard seeds. Fill the peppers with stuffing and place in a shallow baking dish. Drizzle with a little olive oil and bake for

30 minutes.
