Stuffed Mushroom Tofu

I think this is beautiful, when presented nicely, can be used as an meal or a snack..nice if your a vegetarian, if not you may add some cheese on top, and put under the broiler...use any kind of vegtables you prefer, and also your favorite nuts.
RECIPE INGREDIENTS
one extra large mushroom, per person
1 box of couscous prepared with package instructions
1 onion diced
1 clove of garlic, crushed
1 diced carrot
1 diced celery
1 pkg. firm Tofu
Any kind of lettuce to place the mushrooms on when finished.
1 strip pineapple per mushroom
dried blueberries
Toasted walnuts
Orange Dressing
juice of one orange
zest of the orange
1 TBSP.spicy mustard
1/4C. of Walnut oil
1/4 saflower oil
3TBSP.Rice wine vinegar
salt and pepper to taste
Put in a glass jar and shake to combine..
DIRECTIONS
Pan sear mushrooms in pan sprayed with spray about 4 minutes per side..then


take out and let rest


make couscous let set aside


saute veggies in pan with a little olive oil


Add diced Tofu and add to the cooled veggies


cut up pineaple into long slices


toast walnuts and set aside


Blend the cooked veggies with the couscou


add the Tofu. Place a lettuce leaf on plate


Put mushroom in the middle then mound the couscous with the veggies in the middle of the mushroom..


Stick a wedge of pineapple on the side of the mound


add dried blueberries, and drizzle with the orange dressing...Add Toasted Walnuts at the last minute...
